This is the most easiest protein cookie recipy ever!
All my family members absolutely love it- it tastes like a toffee and it’s so light! Yum. It’s loaded with healthy fats and protein. It’s also super easy to make and it doesn’t have any caramelised processed sugar and any flour. Sounds good, isn’t it?
The main secret of this cookie that we use nut butter, it can be almond or cashew butter. If you are a fun of peanut butter, you can even use that instead.
What exactly is a nut butter? It is when nuts turned into a paste by grinding nuts and nothing else added. The result has a high fat content and can be spread like butter. I think they should call it not a butter but a nut spread:). In any way, nut butter can be made from any nuts you can think of – almond, cashew, hazelnut, macadamia, peanut, pecan, pistachio or walnut. I use nut butter a lot in my diet. It make my skin glow;)! My favourites to make shakes, cakes and cookie are of course almond and cashew butters.
Now back to that delicious cookie:). The simple version has only three ingredients, you can however, add some dried cranberries, raisins, blueberries or even chunks of nuts or raw chocolate. Eat it with whatever you like the most (just don’t forget to choose healthy options pls;) ).

300g almond butter paste (or cashew butter)
150g coconut sugar
How to make:
Mix all ingredients in the kitchen processor or use your hands if you don’t have powerful processor. Form 10-12 small round cookie shapes, flatten them carefully using your fingers. Prepare cooking tray with some baking paper, place all cookies on the tray and cook in the oven for about 25-30 mins or until they become slightly hard. Temperature depends on the model of your oven (around 180-190 degrees).
