Gluten-free Vegetable Taco

What is taco?

Taco is a traditional Mexican dish that looks like a big pancake. Usually it composed of wheat flour or sometimes of corn flour folded around a filling. Tacos can be made with different variety of filling. Anything you like or have in your fridge, can be used as filling for tacos. No need to say that because of its simplicity and variety, tacos are very popular.

Today, I want to introduce you easier version of taco, made with only four ingredients. It is also a healthier option because we don’t use any wheat and additives but use lots of fresh vegetables instead:). In this recipe the main ingredients is carrot, however you can replace carrots with beets, sweet potato or courgettes, or any vegetable you prefer.

Vegetable Flourless Taco


10 big carrots (grated, drained)

2-4 tbsp oats (gluten free)

100-150 g grated mozzarella

2 eggs

How to make:

Combine all ingredients in the kitchen processor until smooth. Cover your baking tray with a piece of baking paper. Use your hands to  form four big round tacos (or they can be any shape you prefer).

Bake for 25 min in +185C ( time depends on your type of oven) or until they crispy and golden in colour.

Use any veg you have to fill the tacos. Serve with greens and your choice of sauce. (try my version of raw sour cream sauce, check the sauce  here)
