Raw Strawberry Tart

I had an exciting dialogue today about raw cakes). When I mentioned to my new ‘friends’ that I am a big fun of raw food and love to prepare delicious raw desserts, in response I got a confused face with a question mark. “Raw cakes? Raw? No flour, no eggs, no milk? What are they made of then?  Grass?… Sounds hippy-ish and surely not tasty!”…

..Yeh, kinda grass)) and the most delicious things, I ever ate… was my reply)).

Why do they call them raw cakes?

Raw cakes are cakes that are uncooked. That means you do not cook them in the oven, you do not use any heat at all to prepare this type of cakes. They are considered to be healthy because, usually, they are wheat-free, gluten-free, refind-sugar free, soya-free with minimal process and organic ingredients.

Once you try a raw dessert, you usually want to try more ( at least me;)), because they are deliciously addictive!  There is still the best part:) – your gut will love them. You never feel heavy in your gut after eating one. They are also very nutritious!

Shall we make this deliciously raw tart)?

Tart base:

200g almonds (soaked for 6-8 hours )

14 dates (stone removed )

1 tbsp coconut oil (liquid)

1 tsp vanilla powder

Cream:

100g macadamia nuts (soaked for 6 hours)

1 tbsp coconut oil (liquid)

3 tbsp agave syrup

2 tsp vanilla powder

2 tbsp lecithin granules

Decoration:

Fresh or frozen Strawberries

Coconut flakes

How to make:

For the bases, use food processor to mix base ingredients together. Make sure they are well combined. It should be thick enough  to be able to stand up in the shape of the tart.  Spoon the mix into the tart shaped moulds. Use your fingers or smaller spoon to form all bases. Chill tart bases in the freezer while making cream.

For the cream, use powerful blender or food processor to mix all ingredients. Let it cool down in the fridge for 20 minutes. Fill each tart with a cream. Place in the freezer for few hours but not until completely solid.

For decoration,  decorate with strawberries and coconut flakes. Use your imagination cut strawberries whatever shapes you like.

Chill in the fridge before serving. Enjoy!
